Brownie Bites



Cake pops, cake balls, cake bites, etc began with Bakerella. They are fun, bite sized and delicious.
These are like them, just made with a brownie and chocolate ganache. They are very rich. 

They are obviously a bit labour intensive as you need to make the brownie, then mix it up with the ganache. You want to add enough ganache so the brownie will form balls - but not too much so that it turns to mush. I do this in a food processor but you could also do it by hand if you don't mind getting dirty! I use this brownie recipe and this chocolate ganache recipe.

Once you have rolled the mixture into balls, pop them in the freezer for 30 minutes or so. Melt the chocolate and add a tablespoon of oil. Then dip each ball into the chocolate and tap off the excess. At this stage I have even wrapped them in marshmallow fondant to make them even more decadent. It also makes them look a little neater. 



Notes
You can make these into any shape you want! You can even flatten the mix out and cut out shapes using cookie cutters!

Once covered in chocolate, add your decorations fast as they will rely on the melted chocolate to adhere to the brownie bite. 

Depending on the size of your brownie bites, this recipe makes a lot. They are suitable to freeze - do so after you have made the mix into shapes, but before covering them in chocolate.
